The experience of three generations, the study of two years, the fruit of a territory: Perlage introduces Animae, the first Prosecco without sulfites.
The Animae challenge starts with the 2006 harvest but it has deeper roots: the research of the wine purity, the attention for the consumer and the respect for the environment have always been the pillars of the Perlage philosophy.
The challenge on the spumante, in the topic sulfites free, has always been considered hard (almost impossible) for two reasons
The first difficulty is caused by the yeasts which must accomplish the transformation from the must to the wine, in the fermentation process: they produce by themselves small quantities of sulfites. The still wines, which have just one fermentation, are relatively easy to manage; talking about spumante, we talk about a second fermentation request for the Charmat Method which changes still wines into sparkling wines.
There's two moments of sulfites production in the spumante: using the regular yeast, the natural sulfites end to be higher than the limit fixed by the European law.
Perlage team, under the direction of the winemaker Andrea Gallina, solved this step throughout the collaboration with the Oliver Ogar company, which assisted the work with high competenced people, equipped laboratories and a unique technical advice in choosing a low sulfites production yeast.
Solved these technical difficulty of the vinification trial, the spumante obtained is an organic Prosecco DOCG that in Perlage we like to call "a wine far away in time".
Animae represents a discontinuity compared to the traditional spumante: we know that the sulfites task is the antioxidating one but also the organoleptic raising one. Therefore, having no sulfites, Animae makes the real soul of the Prosecco DOCG come out, with its full primary aromas, the intact perfumes of the grapes and all the intensity of a bouquet that from the vineyard arrives to the glass, straight and with no external influence.
Another feature of Animae is the extremely low sugar level (3 g/l) that makes is very dry, almost a Pas Dosè, but with proprieties similar to a long Charmat.
A Prosecco made with high technology mixed to strong tradition, in which research and memory blend in an elegant and harmonious way.
Valdobbiadene Prosecco DOCG Animae is the first Prosecco DOCG of Conegliano Valdobbiadene made from organic agricolture with no sulfites.
It was born from a route of experimentation that lasts two years and still in evolution: for this reason, Animae is the first satifying result of Prosecco Spumante Sulfites Free and, at the same time, is the basis to know all the potential of such a product.
