Perlage is one of the best-known organic Conegliano Valdobbiadene Prosecco producers in the Veneto region; in 2008 it made the world’s first wine without added sulfites.
The organic wine in question is a Conegliano Valdobbiadene Prosecco Superiore DOCG and has been named “Animae.”
The aim of this project is to seek maximum purity in wine, to bring out the true soul of Conegliano Valdobbiadene Prosecco DOCG and its aromaticity. For its realization, the Perlage organic wine cellar has identified yeasts with low self-sulphur, which replace the conventional ones in the vinification and sparkling phases. In addition, to avoid the oxidation that affects sparkling wines made from Glera grapes in the absence of artificial preservatives, the vinification and sparkling processes take place in the total absence of oxygen.
This has resulted in a Conegliano Valdobbiadene Prosecco with no added sulfites, a pure organic and vegan wine that has increased the value of a brand like Perlage not only among wineries in the Veneto region, but also worldwide.
In 2016 the Animae family expanded, Perlage launched the Cabernet Veneto IGT. This red wine with no added sulfites is made from organically grown grapes and is vegan.
