Organic, or rather biodynamic, wine cookies!

2 min read

In the Italian food and wine tradition we find numerous wine-sweet combinations. Think of Cantucci, typical Tuscan sweets, accompanied with vin santo. Or the Cassata Siciliana paired with Malvasia delle Lipari or again, the Panforte Genovese served with Sciacchetrà.

Are you looking for a creative touch in the kitchen?

We have the recipe for you! We propose biodynamic wine cookies, among the various ingredients you will find our Borgo Faveri Bianco. Wine, great for accompanying desserts can also be a valuable ingredient for flavoring the dough. There are several variations of this recipe, in Perlage’s Bioblog we present the vegan version without the addition of butter, milk or eggs. Biodynamic white wine will make the dough fragrant, but spice lovers can “strengthen” it by adding: cinnamon, star anise, hazelnuts or almonds.

The recipe is quick and easy; here are the ingredients:

100 ml of Borgo Faveri biodynamic white wine

100 ml of seed oil

90 g of granulated sugar

300 g of 00 flour

50 g of whole wheat flour

1 tablespoon baking powder

q.b. powdered sugar

Preparation: First mix the white wine, oil and sugar in a bowl. Then add the baking powder and sifted flours. Knead the dough until it is firm and homogeneous. Divide the dough into small portions and compose the cookies. Place them back on a baking sheet, bake at 170° for 15 minutes. Wait until the biodynamic wine cookies have cooled then sprinkle with powdered sugar before serving and..have a good snack!

Sulfites, natural or added, serve to preserve wine from oxidation and mold. Organic wines use them to a small extent and some, like natural wines, contain none at all. Perlage revolutionized the industry by creating in 2008 the first Prosecco DOCG without added sulfites, Animae, followed in 2016 by Animae Cabernet Veneto IGT. The Animae range celebrates authenticity, purity and respect for the environment.

Perlage began producing vegan wines in 2012 with Sgàjo Prosecco DOC Extra Dry and since 2016 all production has been organic and vegan, combining sustainability and innovation.
