Aleph was born from a rare grape variety, deeply intertwined with its place of origin.
Perlage’s constant research and passion have accompanied it to a new expression: the classic method, making it the first Manzoni Bianco sparkling wine in Conegliano Valdobbiadene. It is a wine that combines roots and innovation, past and vision. In each bubble, the natural elegance of the grape variety, the voice of the terroir and that delicate identity that sets it apart emerge.

Vinification

Grapes are hand-picked between late August and early September, and the wine is fermented at a controlled temperature until late spring. After drawing, Aleph rests in stacks and is aged on the lees for at least 25 months. This delicate phase allows the wine to express all its richness and typicity. Afterwards, disgorgement takes place in the absence of oxygen, this is to avoid oxidative shock, making Aleph sparkling wine pleasant and long-lived.
