From vineyards set on hillsides, kissed by the sun, among centuries-old oaks, mulberry and fig trees. A landscape rich in memory and life, where the roots find nourishment in the dry clay soil, particularly suited to yield red wines of great stature.
The grapes, the fruit of this demanding land, give the wine complexity and character: intense red fruit aromas and a deep tannic texture. Time, kept in oak, softens and ennobles its strength, transforming it into elegance and harmony.

Vinification

The grapes undergo almost total destemming (99%), retaining about 1% of the clusters. This is followed by cryomaceration achieved through the use of dry ice. Vinification takes place in large wooden barrels for a total period of two months: in the first month, manual fulling, and délestage are carried out. Then the wine is transferred to barrique, where it is aged for about 12 months.

First courses such as duck ragout, risotto with mushrooms, crostini with foie gras. Second courses of guinea fowl and filet Rossini style. For a vegetable choice we suggest shiitake mushrooms.
